Chicken Breasts with Goat Cheese and Tomatoes


This is so simple but looks elegant. So delicious it’s hard to believe it’s low calorie! Love it!


4 boneless, skinless chicken breast halves

200 g soft goat cheese

1 small fresh garlic, thinly sliced

6 big tomatoes, diced

Freshly ground pepper and salt, to taste

Extra-virgin olive oil




Preheat oven to 180°C

Cut a horizontal slit along the thin, long edge of a chicken breast half, nearly through to the opposite side. Open up the breast and place goat cheese. Close the breast over the filling, pressing the edges firmly together to seal. Repeat with the remaining chicken breasts and filling.





Spread tomatoes onto baking pan, add garlic and breasts. Add salt, pepper and sprinkle with olive oil .



Bake  40 min. or until chicken is done. Serve with basil. Perfect with smashed potatoes.
