Easy Salmon

Its so easy to find fresh salmon. And I love salmon:) This is one of my easiest salmon recipes that you can make easily in your own home in less than 30 minutes. What could be better? Everyone has busy lives and eating well has to be one of the most important decisions we need to make.  But eating healthy doesn’t mean we need to scrimp on the flavors and this Salmon is loaded with flavor.

 

With a busy lifestyle we need to find healthy flavorful dishes that we can make in a short amount time, and of course we need them to be cost effective.

You can make the feta-olive tapenade ahead of time to even save yourself even more time and do yourself a favor and make a little extra because you’re going to love the flavor of this feta-olive tapenade. It makes a great bruschetta topping and would be delicious with grilled chicken or any other fish.    Serve this dish with your favorite side dish or just a salad and you have a healthy delicious restaurant style dinner on your table in less than 30 minutes! 

 

 

Easy Salmon

Ingredients
  1. 2 salmon filets (I used coho)
  2. 60gr. olives
  3. 60gr. diced tomato
  4. 40gr. feta crumbles
  5. 1 tablespoon finely chopped Italian parsley
  6. splash of olive oil
  7. splash of balsamic vinegar
  8. sea salt and pepper to taste
Instructions
  1. preheat the oven to 200 degrees
  2. rinse salmon under cold running water
  3. remove skin from salmon
  4. sprinkle the top of the salmon with sea salt and black pepper
  5. place salmon in baking dish with a little water in the dish to keep the salmon from drying out
  6. place in oven and bake for 15 minutes
  7. Remove from oven and top with feta-olive tapenade
  8. Tapenade
  9. chop mixed olives and tomatoes in a small dice
  10. finely chop Italian parsley
  11. mix the olives, tomatoes, parsley and feta crumbles together adding the olive oil and balsamic vinegar
  12. season to taste with sea salt and black pepper
  13. Top salmon liberally with feta-olive tapenade and serve
