I love minestrone. Very simple and very healthy. There are so many versions but I love this one – without meat and pasta. Enjoy!


2 teaspoon olive oil

1 onion, chopped

2 cloves garlic, sliced

1 carrot, chopped

400g can peeled tomatoes

5 cups chicken or vegetable stock

150g broccoli, chopped

100g green beans, chopped

310g can cannellini beans, drained

sea salt and black pepper

chopped falt-leaf parsley



1. Cook the oil, onion, garlic and carrot in a large saucepan over medium heat for 5 minutes

2. Add tomatoes and stock- Simmer for 20 minutes

3. Add broccoli, green and cannellini beans, salt and pepper. Continue to simmer for 15 minutes.

4. Stir through the parsley, ladle in the bowls and serve with shaved parmesan cheese.
