Nut Plum Pie

There is nothing like the sight of late-summer fruit piled high at the farmstand to inspire one to bake. For this pie, the plums are arranged over a layer of ground walnuts, sugar and flour, which absorbs the delicious plummy juices and helps keep the pastry crust crisp. You can Β serve with reduced-fat vanilla ice cream. Specially baked for



1 kg organic plums

200 g organic butter, room temperature

100 g icing cane sugar

3 organic eggs

125 g organic hazelnuts

125 g organic almonds

100 g flour

4 tsp organic apricot jam




Crush the nuts in mixer.

Whisk the butter and sugar, add eggs, flour, nuts.






Plumps cut into quarters. Β Pour mixture into a greased cake tin (28 cm) and add plums.


Bake in a preheated oven at 190 degrees for 15 minutes, then 40 minutes at 150. Warm jam and glaze the cake.


It tastes great even the second day… If something will be left….
