Roasted Tomato Salad

Amazing tomatoes!  You can cut tomatoes after roasted and then add to grilled chicken or fish. Or you can serve with with a loaf of warm Italian bread.


 

Ingredients

500g. plum tomatoes, halved lengthwise
2 tablespoons good olive oil
2 large garlic cloves
2 teaspoons sugar
Kosher salt and freshly ground black pepper

Fresh tymian or rosemary

Directions

Preheat the oven to 180 degrees C.

Arrange the tomatoes and garlic on a sheet pan. Drizzle with olive oil, salt and pepper . Add tymian or rosemary. Bake for 10 minutes and cool to room temperature inside the oven.

Peel the garlic. Serve with goat cheese or with avocado on bread. Enjoy!
