Sesame Cookies

If you wonder what is like to have sesame seeds in cookies… Well, they are not really sweet, but the sesame seeds adds nutty savory flavor.  To me, it’s a perfect balance between the two, and the crisp texture is just too addictive! No sugar, no butter, no flour, no eggs…So simple and so tasty. Perfect for breakfast or snack. Plus sesame is great source of calcium.

250 gr. almond flour

1/4 teaspoon salt

1/4 teaspoon baking soda

200 gr. agave nectar or honey

200 gr. tahini

1 tablespoon olive oil/grapeseed oil

1 tablespoon vanilla extract

sesame seeds

In a large bowl, combine almond flour, salt and baking soda

In a smaller bowl, blend together agave, tahini, oil and vanilla

Blend the dry ingredients into the wet

Form the dough into 1 inch balls and roll in the sesame seeds

Place on a baking paper lined baking sheet and flatten

Bake at 200° for 8-10 minutes until lightly brown

Cool on baking sheet

If you like your cookies crunchy, leave them out after baking. If you are looking for cookies with a chewier center then store them in an airtight container.
