I can’t tell you how great this recipe is. I make this cake every month. It never fails that everyone asks for the recipe. It looks great and its really simple. You can use any berries on the top – strawberries, blueberries or raspberries. This recipe is for 18 cm cake pan
65 g. butter
40 g sugar
1 egg yolk
125 g flour
100 g. mascarpone
50 g. ground almonds
50 g. icing sugar
1 tbsp. peach liqueur
1 egg white
200 g strawberries, or any other berries you have
In a bowl combine all the ingredients for dough. Stir until just combined..
Wrap in a foil and leave in refrigerator for 30 minutes
Preheat oven to 425 degrees F (220 degrees C). Grease and flour one 18 cm round cake pan
Roll the dough and put inside the pan. Prick with a fork.
Bake for 15 minutes. Let it cool completely!!!
For cream – mix together mascarpone, almonds, sugar and peach liqueur. Whisk egg white with salt and add to cream.
Spread the cream on the cake and decorate with berries of your choice. Leave it in refrigerator for 30 minutes.
